Using French/Mexican/Miami Themes

We are thinking of integrating these into our February Kick Off to get everyone excited about the trips. Last year we just had a long table with a set up. This year we'd like to take it a step further.
Music/food etc. Is anyone planning on doing something similar? Any ideas?
